This is a reference to a line from the Bible that espouses the fleeting nature of life. Considering the time period and location, it is most likely Hester knew it from the Kings James interpretation: “For all flesh is as grass, and all the glory of man as the flower of grass.” Meaning, in this context, that Hester thinks Miss Furnivall looks rather aged.
