I've found no record of or reference to animal mummification in India during the 19th century or to a monkey's paw being found there during the Victorian period, suggesting that the monkey's paw is an invention of Jacobs'. This conflation of Ancient Egyptian mummification with India could be a result of the general othering of the "East" due to Victorian Orientalism, Jacobs and/or his readers unable to see the differences between these places. It could also be a deliberate attempt by Jacobs to capitalize on the terror of the "exotic" nature of English colonies in Africa and Asia.
